Description
The tiny bean of Sorano is a dwarf bean from the Upper Maremma: a bushy, non-climbing plant that produces small white seeds with a thin skin.
On tasting it has an intense flavour and a soft, delicate texture: it cooks quickly and holds its shape without breaking up. Excellent in soups, warm salads and side dishes with extra virgin olive oil, where its finesse is not masked by the dressing.
300 g pack. A rare ecotype, kept alive by a handful of local growers.
A pulse selected from the heritage varieties and ecotypes of Tuscany, grown by small producers and packed without preservatives. Soaking in cold water before cooking is recommended, to bring out creaminess and digestibility.
